Sauteing is fast, lively cooking that keeps things bright and just-tender. Everything moves, nothing burns.

Do this

  • Have everything cut and ready before the pan goes on. Sauteing happens quickly.
  • Use medium-high heat and keep the food moving with a toss or a stir.
  • Cut pieces a similar size so they finish at the same time.

Watch out for

  • Do not overload the pan. Crowded food sweats and goes soggy.
  • Do not walk away. This is hands-on from start to finish.
  • Do not add garlic too early. It burns fast, so give it the last minute or so.

Remember

Prep first, then keep it moving. Sauteing rewards a hot pan and quick hands.
