Doughs and batters come together by feel. Once you know what each should look like, you stop needing the recipe.
Do this
- Let dough rest when a recipe says to. Resting relaxes it so it rolls out without fighting back.
- Keep pastry dough cold. Cold butter is what makes it flaky.
- Mix batters just until combined. A few lumps are fine and mean tender results.
Watch out for
- Do not overwork a tender dough. The more you knead it, the tougher it gets.
- Do not add all the flour at once. Hold a little back and add it only if the dough needs it.
- Do not skip the rest to save time. It is working even when you are not.
Remember
Cold for flaky, rested for easy, gentle for tender.
