Brown Sugar Cinnamon Pop Tarts

The egg wash on both sides of these is what gives you that gorgeous golden crust, so don't skip brushing the tops after you seal them. Leaving that quarter-inch border clear when you add filling keeps the edges from getting soggy and helps the fork seal actually hold during baking.

Brown Sugar Cinnamon Pop Tarts

Gather

Ingredients

For The Pop Tart
  • 1 package pre-made pie crust (the box that comes with 2 rolls)
  • 1/2 cup dark brown sugar packed
  • 2 teaspoons cinnamon
  • 1 tablespoon flour
For The Icing
  • 1 cup powdered sugar
  • 2 1/2 tablespoons milk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
Egg Wash
  • 1 large egg
  • 2 teaspoons milk

Steps

  1. Preheat your oven to 350 degrees F.
  2. Line a cookie sheet with parchment paper or a silicone baking mat.
  3. Roll out both of your pre-made pie dough circles into rectangles. (You will have to do a little bit of trimming)
  4. Cut out 12 even rectangles.
  5. Lay the rectangles on the cookies sheet.
  6. In a bowl, mix your egg and milk for the egg wash. Use a pastry brush to brush each piece of dough with the egg mixture.
  7. In a medium sized bowl, mix together your brown sugar, cinnamon and flour for the filling.
  8. Scoop about 1 tablespoon of filling on 6 of the dough rectangles.
  9. Spread around the dough, leaving a 1/4 of an inch around the rim clear.
  10. Cover the 6 dough rectangles with the top dough pieces. Use a fork to close the seams around the edges.
  11. Brush the tops with egg wash.
  12. Poke small holes in the top with a fork to allow flaking.
  13. Bake for 18 minutes.
  14. Allow to cool for at least 15-20 minutes.
  15. In another bowl, mix together your powdered sugar, milk, vanilla, and cinnamon for the icing. (You want it to be a thicker consistency)
  16. Spread over the tops of the Pop Tarts when cooled. Let the icing sit for at least 30 minutes. (They are the BEST the next day when everything has set and hardened)
