Baking is the one place where measuring really matters. Treat the recipe like a recipe and you will be rewarded every time.
Do this
- Measure by weight when you can. A kitchen scale is the single best upgrade for baking.
- Preheat fully and get to know your oven. Most run a little hot or cool, so an oven thermometer pays off.
- Bring butter and eggs to room temp when a recipe asks, so they blend evenly.
Watch out for
- Do not open the oven early. The rush of cool air can sink a cake.
- Do not overmix once the flour goes in. Mix just until it comes together for tender results.
- Do not swap pan sizes without a thought. A different pan changes the bake time.
Remember
Bake by weight, trust the timer, and resist opening the door.
