BBQ Chicken Flatbreads

Naan bread is your shortcut to a crispy, chewy crust without any fussing, and the high heat is what makes it work, bake at 450 degrees so the cheese bubbles and the edges get golden before the toppings steam the bread soggy. Keep your pineapple and peppers chunky so they don't collapse into mush and you actually taste them against the BBQ sauce.

BBQ Chicken Flatbreads

Yield: 4 people

Gather

Ingredients

  • 4 pieces naan bread
  • 3-4 cooked chicken breast diced ( see my recipe for perfect juicy chicken)
  • primal kitchen BBQ sauce
  • 1-2 cups shredded mozzarella cheese
  • 1-2 cups fresh pineapple cubed
  • 1 red bell pepper diced
  • Italian Seasoning - optional

Let’s cook

Steps

  1. Preheat your oven to 450 degrees.
  2. Place your naan bread on a sheet pan. Coat each piece with BBQ sauce, layering with cubed chicken breast, mozzarella cheese, diced pineapple and bell peppers. ( I like adding my bell peppers raw, but if you don't like the crunch, feel free to saute them before you add to the pizza. Season with Italian seasoning and optional red pepper.
  3. Bake until cheese is bubbly and everything has a nice golden color ( about 10 minutes or less).
  4. Drizzle with with more BBQ sauce and olive oil before serving. Enjoy!
