Blooming means warming whole or ground spices in oil or butter for a minute before the rest goes in. It wakes them up and makes the whole dish taste deeper.
Do this
- Warm the spices in a little fat over medium heat until they smell fragrant, usually under a minute.
- Give whole spices a touch longer than ground, and listen for them to sizzle and pop.
- Add aromatics like garlic and ginger right after, so they pick up the spiced oil.
Watch out for
- Do not let them burn. Spices go from fragrant to bitter fast, so keep them moving.
- Do not bloom over high heat. Medium gives you flavor without scorching.
- Do not add ground spices to a dry pan. They need the fat to release their flavor.
Remember
A minute in warm fat changes everything. Smell for the moment they come alive.
