Pumpkin Rolls

The combination of butter and oil keeps these rolls tender and moist while the cream cheese adds a subtle tang that makes the pumpkin flavor pop. Fold your dry ingredients in gently so you don't overwork the dough, which would make them dense instead of light.

Gather

Ingredients

  • 1 can simple truth solid packed pumpkin
  • 1 cup all-purpose flour
  • 3 1/2 cups cake flour
  • 1 cup granulated sugar
  • 1 stick softened unsalted butter
  • 1/3 cup vegetable or canola oil
  • 1/2 tablespoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon ground nutmeg
  • 2 tablespoons softened cream cheese

Steps

  1. Preheat your oven to 350 degrees F.
  2. Line a cookie sheet with a silicone mat or parchment paper.
  3. In a large bowl, combine your canned pumpkin, softened butter, oil, softened cream cheese and sugar.
  4. In a separate bowl, whisk together all of the flour, baking soda, cinnamon and nutmeg.
  5. Slowly fold the flour mixture a little at a time into the pumpkin mixture. (The dough should be sticky, but easy to form into balls of dough.Add more cake flour if the mixture is still wet.)
  6. Split and roll the dough into 8 large balls. Place on baking sheet and sprinkle tops with cinnamon.
  7. Bake for 20 minutes.
