Roasting

Roasting is the oven doing the work for you. High, dry heat turns the edges deep and sweet while you do something else.

Do this

  • Preheat fully. A hot oven from the start gives you color and crisp edges.
  • Give everything room on the pan in a single layer so it roasts instead of steams.
  • Toss in enough oil and salt to coat. That is where the browning comes from.

Watch out for

  • Do not pile vegetables in a heap. Spread them out so the heat can reach every side.
  • Do not open the door every two minutes. Let the heat stay put and do its job.
  • Do not skip the flip. Turning things halfway through gives you even color.

Remember

One layer, hot oven, enough oil. Crowding is the only thing that ruins a roast.
