Peanut Butter Chocolate Chip Banana Bread

Really ripe bananas are what make this bread moist and flavorful, so don't skip them even if they look almost too spotted. The peanut butter goes into the wet ingredients rather than getting mixed into the flour, which keeps it from clumping and gives you a smoother, more evenly distributed batter.

Peanut Butter Chocolate Chip Banana Bread

Gather

Ingredients

  • 2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup sugar
  • 2 eggs
  • 1/3 cup canola oil
  • 1/2 cup creamy peanut butter
  • 3 ripe bananas mashed
  • 1/2 cup chocolate chips

Steps

  1. Preheat oven to 350 degrees.
  2. Spray a bread loaf pan with cooking spray.
  3. In a medium bowl mix together the sugar, oil and eggs until combined. (Don't over mix)
  4. In a large bowl whisk together the flour, baking soda, and salt.
  5. Mash the 3-4 ripe banana's in a bowl with a fork. Add the mashed bananas to the sugar, oil, egg mixture. Stir in the creamy peanut butter.
  6. Start to slowly add the flour mixture to the wet ingredients, folding together with a rubber spatula. (Don't over mix)
  7. Fold in chocolate chips.
  8. Pour the bread batter into your greased bread pan.
  9. Bake 50 minutes or until center is no longer gooey and top is golden brown.
