Strawberry Balsamic Glazed Salmon

The balsamic vinegar is your secret here, cutting through the sweetness of the jam so the glaze tastes sophisticated rather than sticky. Microwaving the glaze for just 20-30 seconds before spreading it means it clings to the salmon instead of sliding off in the oven.

Strawberry Balsamic Glazed Salmon

Gather

Ingredients

  • 2 fresh salmon fillets
  • pinch salt
  • 1/2 cup strawberry jam
  • 1 tablespoon soy sauce
  • 1 tablespoon balsamic vinegar

Let’s cook

Steps

  1. Preheat oven to 425 degrees F.
  2. Spray a small oven-safe dish with non-stick spray.
  3. Place salmon fillets skin side down in the dish.
  4. Sprinkle each fillet with a small pinch of salt.
  5. In a small microwavable bowl, combine the strawberry jam, soy sauce, and balsmaic vinegar.
  6. Microwave mixture for 20-30 seconds, or until melted and combined.
  7. Pour mixture over the salmon fillets and rub the glaze on the fish using a spoon.
  8. Bake for 15-20 minutes, or until the center is no longer raw. (mine was perfect at 18 minutes, every oven is a little different)
  9. Serve and pour glaze in the bottom of the dish on the salmon.
