Mini Cauliflower Crust Pizzas

The moisture in cauliflower is the enemy of a crispy crust, so don't skip wringing it out in a dish towel after microwaving. I bake the base alone first, then add toppings, which gives you that satisfying structure instead of a soggy mess.

Mini Cauliflower Crust Pizzas

Gather

Ingredients

Cauliflower Crust
  • 1 package crumbled cauliflower florets (You can also buy a head of cauliflower and mince it yourself)
  • 2 eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon pizza seasoning (optional)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt & pepper
Pizza Toppings
  • 1 package mini pepperonis
  • shredded mozzarella cheese
  • shredded parmesan cheese
  • oregeno
  • pizza seasoning
  • 1 jar pizza sauce / marinara of choice
  • fresh parsley for garnish

Let’s cook

Steps

  1. Preheat oven to 450 degrees F.
  2. In a microwave safe bowl, microwave your minced cauliflower for 7 minutes.
  3. Let the cauliflower cool for 10 minutes.
  4. Wrap cauliflower in a clean dish towel and squeeze out extra water.
  5. Pour back into bowl.
  6. Add the mozzarella, parmesan, eggs, oregeno, pizza seasoning, salt, pepper, and onion powder to the bowl with the cauliflower. Mix until well combined.
  7. On a greased sheet pan, shape mini pizzas with the cauliflower mixture.
  8. Bake the crust for 15-20 minutes, or until the tops start to turn golden brown.
  9. Remove from oven. Top with the sauce, cheeses, mini pepperonis, and seasonings.
  10. Bake for an additional 5-8 minutes, or until cheese is bubbly.
  11. Sprinkle with parlsey for garnish, ENJOY!
