Kickin' Chicken Baked Meatballs
Baking these instead of pan-frying means you can make a full batch without babysitting, and the parmesan in the mixture helps them stay tender and seasoned all the way through. Roll them fairly small and even so they cook at the same rate, then don't pull them from the oven until they're genuinely golden, not just pale.

Kickin' Chicken Baked Meatballs

Gather
Ingredients
- 1 pound ground chicken
- 1 egg
- 1/2 cup shredded parmesan cheese
- 1/2 cup bread crumbs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 2 Tablespoons olive oil
Let’s cook
Steps
- Preheat your oven to 400 degrees. Cover two sheet pans with foil, and lightly spray with non-stick spray.
- In a medium bowl, mix every ingredient listed above until well combined.
- Use a small cookie scoop, spoon, or your hands to roll the meat mixture into 20 small meatballs.
- Evenly spread out the meatballs on the sheet pans.
- Bake for 25-30 minutes, or until golden and cooked through. Sprinkle with extra dried parsley and serve warm with your favorite dipping sauce, I loved it in BBQ!
- You can also freeze these to use for salads, soups, or just reheat to eat by itself. ENJOY! (:
