Pan Sauces

The browned bits stuck to your pan after searing are pure flavor. A pan sauce turns them into something silky in five minutes.

Do this

  • After searing, pour off the excess fat, then add liquid like stock, wine, or a splash of water and scrape up every browned bit.
  • Let it bubble and reduce until it coats the back of a spoon.
  • Finish off the heat with a knob of cold butter swirled in for shine and body.

Watch out for

  • Do not wash the pan. Those stuck-on bits are the sauce.
  • Do not add the butter while it is boiling hard. Off the heat keeps it glossy instead of greasy.
  • Do not forget to taste for salt and a squeeze of acid at the end.

Remember

Deglaze, reduce, finish with butter. The best sauce is already in your pan.
