Grilling is live fire and a little char. The big move is building two heat zones so you stay in control.
Do this
- Set up a hot side and a cooler side. Sear over the flame, then move to the cool side to finish.
- Get the grates hot and clean before food touches them. Hot grates leave clean marks and stick less.
- Oil the food, not the grate, and let it sear before you move it.
Watch out for
- Do not poke and flip constantly. Let a crust form, then turn once.
- Do not cook everything over screaming flames. Thick cuts need the cooler side to finish without burning.
- Do not guess on big cuts. A quick thermometer check beats cutting in and losing the juices.
Remember
Two zones is the whole game. Sear hot, finish gentle.
