Citrus Salmon Salad
Sear the salmon skin side up first, which keeps the flesh from sticking and lets the skin crisp while the heat gently cooks through. Blending the cilantro yogurt dressing right before you serve it keeps that fresh green color bright instead of turning muddy.

Citrus Salmon Salad

Gather
Ingredients
- 4 fresh salmon fillets
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup plain greek yogurt
- 1/2 cup fresh cilantro
- 2 limes juiced
- 1 teaspoon honey
- 1 bunch kale chopped small
- 2 oranges
- 1 grapefruit
- 1 avocado sliced
- 1 cup quinoa cooked

Steps
- In a bowl combine the olive oil, smoked paprika, garlic powder, salt, pepper.
- Brush mixture over salmon.
- Heat a medium size skillet over medium-high heat. Add the salmon, skin side facing up. Sear the salmon for 3-4 minutes and then flip and cook for another 5 minutes or until the salmon is done. This will vary depending on the size of your salmon.
- To make the dressing: In a blender, mix the yogurt, cilantro, lime juice, honey and a large pinch of salt.
- Add the kale to a large bowl and pour over the yogurt sauce. (Pour as much dressing as you prefer);"
- Add the oranges, avocado, and quinoa and gently toss to combine. Divide the salad among 4 and top each with salmon;";
