Broccoli & Bacon Salad with Honey-Balsamic Dressing
Render the bacon in the oven instead of a skillet so it cooks evenly and you can drain off the fat halfway through for the crispiest possible result. Everything else in this salad is really just a vehicle for that bacon, so it's worth doing that part right.

Broccoli & Bacon Salad with Honey-Balsamic Dressing

Gather
Ingredients
- 2 heads broccoli
- 1/3 cup craisins
- 1/2 cup crumbled feta cheese
- 8 strips thick applewood smoked bacon
Honey-Balsamic Dressing
- 1/2 cup mayo
- 2 Tablespoons balsamic
- 1/2 Tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Let’s cook
Steps
- Preheat your oven to 425 degrees.
- Line a rimmed cookie sheet with foil. Lay 8 strips of thick bacon across the sheet. Bake 15-20 minutes pouring out extra grease in the sink halfway through to create ultimate crisp.
- As the bacon cooks; wash and break chop your 2 broccoli heads in small bite size florets. Add to a large mixing bowl.
- To your bowl with the broccoli, add the craisins, feta. Toss to combine.
- In a separate small mixing bowl, combine all of the honey-balsamic dressing ingredients until smooth.
- Pour over the broccoli salad. Toss until everything is well coated.
- When the bacon is done and cooled, pat with paper towel to remove any grease. Crumble and pour into broccoli salad bowl. Toss till everything is well combined.
- Keep cold in refrigerator, until ready to serve!
