Bang Bang Chicken Bowls
This is the dinner my kids actually cheer for, and it comes together faster than takeout. I almost gave up on the sauce the first three times (too thin, then way too sweet), but this ratio is THE one. Don't stress the crisp - the air fryer does the work.

Ingredients
Chicken
- 1 lb chicken thighs, cubed
- 1/2 cup cornstarch
Bang bang sauce
- 1/2 cup mayo
- 1/4 cup sweet chili sauce
- 1 tbsp sriracha more to taste
Bowls
- 3 cups cooked rice
Steps
- Pat the chicken very dry, then toss in cornstarch until coated.
- Air-fry at 400F for 12-15 minutes, shaking halfway, until deeply crisp.
- Whisk the mayo, sweet chili, and sriracha into the bang bang sauce.
- Toss the hot chicken in half the sauce. Build bowls over rice and drizzle the rest.
