Bang Bang Chicken Bowls

This is the dinner my kids actually cheer for, and it comes together faster than takeout. I almost gave up on the sauce the first three times (too thin, then way too sweet), but this ratio is THE one. Don't stress the crisp - the air fryer does the work.

Bang Bang Chicken Bowls

Ingredients

Chicken
  • 1 lb chicken thighs, cubed
  • 1/2 cup cornstarch
Bang bang sauce
  • 1/2 cup mayo
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha more to taste
Bowls
  • 3 cups cooked rice

Steps

  1. Pat the chicken very dry, then toss in cornstarch until coated.
  2. Air-fry at 400F for 12-15 minutes, shaking halfway, until deeply crisp.
  3. Whisk the mayo, sweet chili, and sriracha into the bang bang sauce.
  4. Toss the hot chicken in half the sauce. Build bowls over rice and drizzle the rest.
