Balsamic and Feta Watermelon Salad
Reducing the balsamic vinegar with a little sugar concentrates its tang and makes it syrupy enough to cling to the watermelon instead of pooling at the bottom. This is what transforms a simple salad into something that actually tastes intentional.

Gather
Ingredients
- 1/4 cup balsamic vinegar
- 1 tablespoon sugar
- 10 pieces seedless watermelon chopped into large cubes
- 5 ounces crumbled feta cheese
- mint or cilantro for presentation

Steps
- Heat a small saucepan over medium heat.
- Mix together the balsmaic vinegar and the sugar. Cook the mixture in the saucepan 4-5 minutes.
- In a medium sized bowl, add the watermelon cubes and drizzle with the balsamic mixture.
- Sprinkle the feta cheese on top and add your leaf garnish.
