Bacon Wrapped Green Been Bundles

Blanch the green beans for just three minutes, then shock them in ice water before wrapping, this keeps them tender-crisp instead of turning them mushy during the final bake. The bacon starts partially cooked so it crisps up perfectly alongside the beans without drying them out.

Bacon Wrapped Green Been Bundles

Gather

Ingredients

  • 6 slices thick applewood smoked bacon
  • 1 lb fresh green beans washed and trimmed
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon minced garlic fresh or from the jar
  • 3 tablespoons brown sugar packed
  • 1 teaspoon pepper

Steps

  1. Preheat oven to 400°F.
  2. Line a baking sheet with foil. Lay bacon strips on pan. Bake for 10 minutes or until bacon is just starting to brown while remaining pliable.
  3. Drain bacon…once cool, cut each slice in half.
  4. Reduce oven to 350°F;";
  5. Bring a large pot of water to a boil;";
  6. Blanch green beans by putting them into the boiling water for 3 minutes;";
  7. Drain and immediately transfer beans to a large bowl of ice water to stop the cooking;";
  8. In a small pot, melt the butter. Mix in salt, minced garlic, and brown sugar until well blended.
  9. Assemble bundles, lay 4 to 8 beans in a pile (depending on how thick they are.)
  10. Take a half piece of bacon and wrap it around the bundle, tucking the ends underneath. Lay the bundle on a baking sheet with the bacon seam-side down.
  11. Drizzle the sugar mixture over each green bean bundle. Season with black pepper, to taste.
  12. Cook at 350°F for 20 to 25 minutes or until bacon is crisp and cooked.
